Fancy Mini Chocolate Cakes Recipe
Decorative individual Chocolate cakes, These yummy mini cakes are a guest favorite.
3/4 cup Bittersweet chocolate
4 tbps Butter
4 Eggs, separated
1 tsp Vanilla extract
1 tbsp All purpose flour
1/4 tsp Salt
2 tablespoons unsalted butter, at room temperature
6 tablespoons sour cream
1 teaspoon vanilla
1 teaspoon honey
1¼ cups powdered sugar
1/2 cup heavy cream, whipped
Preheat oven to 350F. grease and flour 4 Ramekins.
Melt chocolate and butter together in microwave or in a double boiler. Whip eggs yolks, sugar, vanilla and salt vigorously together for about 2 minutes, until well combined. Combine melted chocolate with the egg mixture. Whip egg whites until soft peaks form.
Sprinkle flour over the chocolate-egg mixture and add the egg whites. Gently fold everything together until well combined. spoon the mixture into the ramekins.
Bake for about 15 minutes. remove from oven and let cool before removing from ramekins.
To make the frosting, whip the butter, sour cream, vanilla, and honey until smooth. Add the sugar, a little at a time and whip until well mixed.
Frost cakes, and decorate with chocolate shavings, whipped cream and strawberries.
